Food Handler Skills & Knowledge |

The owners of food businesses are responsible for ensuring that staff who handle food or who supervise this work have the skills and knowledge in food safety and food hygiene for the work they do. Food handlers need the skills and knowledge to keep food safe for the jobs that they do in the business. They do not need skills and knowledge for all jobs in the business. For example, a cook will need skills and knowledge in food safety and food hygiene that are quite different from those needed by a waiter or cleaner. The ‘Food Safety Fundamentals’ pamphlet available from your Council or the Department of Health provides information on the key knowledge requirements for the food retail and service sectors. One of the ways to ensure staff have the relevant skills and knowledge to produce safe food is to work through the food handling activities listed in the appropriate industry fact sheets below to identify food safety issues and further training requirements.
